April 2010 - Dinner #3 Theme - Countries Chosen at Random from the Back of an Atlas

Moldova...what the hell?

Semolina Pudding
3.5 c milk
1.5 c semolina flour
.5 c sugar
.5 c + 2 tb raisins
2 tb butter
4 eggs
3 tb rum
pinch of salt

Heat milk, then add semolina in a thin stream as you constantly stir. Cook for 15 minutes and remove from heat, Let cool slightly and add the rest of the ingredients. Transfer to dish that has been buttered and dusted with breadcrumbs. Bake at 350 degrees for about 40 minutes until set. Cool slightly and serve warm or serve at room temperature.
